Steamed Sea Bream with Lemon and Herbs

A light, elegant Mediterranean-style steamed sea bream with lemon, parsley, garlic, and extra virgin olive oil. Tender, aromatic, and ready in about 30 minutes.

    Rinse the cleaned sea bream under cold water and pat it completely dry with kitchen paper.

    Check the cavity and skin for remaining scales or bones, then place the fish on a clean board.

    Make 3 shallow diagonal cuts on each side of the fish to help the steam and seasoning penetrate.

    Season the inside cavity with half the salt and a little black pepper.

    Fill the cavity with a few lemon slices, one lightly crushed garlic clove, and parsley stems.

    Rub the outside of the fish with olive oil, remaining salt, and black pepper.

    Place lemon slices and parsley on the base of a steaming tray or heatproof plate.

    Set the sea bream on top, keeping it slightly elevated from excess liquid.

    Pour water into a pot or steamer base and bring it to a gentle simmer, not a violent boil.

    Place the tray or plate into the steamer, cover tightly, and steam over medium heat.

    Steam for 14–18 minutes, depending on the thickness of the fish.

    Check doneness: the flesh should turn opaque and flake easily near the backbone.

    Carefully lift the fish from the steamer and rest it for 2 minutes.

    Drizzle with extra virgin olive oil and add lemon zest.
