Wash the turnips very well, trim the tops and root ends, then peel them.
Cut them into wedges about 1 cm / 0.4 in thick so they cook evenly and are easy to turn on the grill.
Sprinkle with half the salt and let them rest for 10 minutes. This draws out a little moisture and helps browning.
Pat dry. In a bowl, mix the olive oil, garlic, thyme, and a little black pepper. Coat the turnips well.
Heat a grill pan or barbecue to medium-high. When hot, place the turnips in a single layer.
Grill for 4–5 minutes on the first side until marked and lightly charred.
Turn and grill the second side for another 4–5 minutes, or until the center is tender when pierced with a knife.
Move to a serving plate. Add lemon juice, the remaining salt, parsley, and optional lemon zest.
Serve warm.
