Decadent Triple Chocolate Espresso Mousse Inspired by Italian Coffee Culture Techniques

    Chop the dark and milk chocolate finely, then place them in a heatproof bowl so they melt evenly.

    Brew strong espresso, let it cool for 2 minutes, then pour it over the chocolate.

    Melt the chocolate and espresso gently over a bain-marie, stirring until glossy; do not let the bowl touch boiling water.

    Whisk egg yolks, sugar, and salt over gentle steam for 5–7 minutes until pale, thick, and warm to 71°C / 160°F.

    Remove from the heat and whisk in the melted chocolate mixture until smooth and shiny.

    In a chilled bowl, whip 300 ml / 10 fl oz cream to soft peaks.

    In another bowl, loosen the mascarpone with vanilla and 120 ml / 4 fl oz cream until smooth.

    Fold the mascarpone cream into the chocolate base, then fold in the whipped cream in three additions to keep the mousse airy.

    Spoon into glasses, cover, and chill for at least 4 hours until softly set.
