Elegant baked mussels finished under high heat with a crisp herb crumb, a silky white-wine glaze, and a bright citrus lift—restaurant-style, but doable at home.

    Prep & clean (5–8 min)

    Rinse mussels under cold water. Scrub shells with a brush. Pull off the “beard” (the fibrous tuft) by gripping and tugging toward the hinge. Discard any mussels that are cracked or stay open when tapped. Keep cleaned mussels cold while you prep the aromatics.

    Open the mussels (6–8 min)

    Heat a wide pot on medium-high. Add half the olive oil, then the shallot and half the garlic; stir 30 seconds. Add mussels and pour in the wine. Cover and steam, shaking the pot once or twice, until most shells open (about 4–6 minutes). Turn off heat. Discard any mussels that remain closed.

    Build the “chef” glaze (5–7 min)

    Strain the cooking liquid into a small pan (keep it—this is flavor gold). Boil it gently to reduce by about half. Lower heat and whisk in butter to make it glossy and slightly creamy. Add lemon juice and a pinch of pepper. Taste: it should be bright, not salty.

    Make the gratin crust (2–3 min)

    In a bowl combine breadcrumbs, parsley, lemon zest, grated cheese, remaining garlic, and the rest of the olive oil. Mix until it feels like “damp sand” that clumps when pressed. If it’s dry, add a tiny splash of reduced mussel liquid.

    Dress, top, and gratin (6–10 min)

    Heat oven to 230°C / 446°F (or use broiler/grill). Set opened mussels on a tray or baking dish (shell half with the mussel inside). Spoon a little glaze onto each mussel, then add a neat mound of crust. Bake 4–6 minutes (or broil 1–3 minutes) until deeply golden. Plate immediately and finish with a few drops of glaze and fresh parsley.
