Classic Moist Banana Bread

Preheat the oven to 175°C / 350°F. Grease a 23 × 13 cm / 9 × 5 in loaf pan and line it with parchment paper.
Mash the bananas in a large bowl with a fork until mostly smooth, leaving a few small pieces for texture.
Stir in the melted butter while it is warm, not hot, until the banana mixture looks glossy.
Add brown sugar, granulated sugar, eggs, yogurt, and vanilla. Whisk until smooth and creamy.
In a separate bowl, combine flour, baking soda, salt, and cinnamon so the leavening is evenly spread.
Fold the dry ingredients into the wet mixture with a spatula. Stop as soon as no dry streaks remain.
Fold in walnuts or chocolate chips, if using. Do not overmix, or the loaf may become dense.
Pour the batter into the prepared pan and smooth the top. Tap the pan gently once to release large air pockets.
Bake for 55–65 minutes, until the top is deep golden and a skewer inserted in the center comes out clean or with a few moist crumbs.
Cool in the pan for 15 minutes, then lift out and cool on a rack for at least 30 minutes before slicing.
