Apple Fritters

Apple fritters are tender golden rings of fresh apple dipped in a light cinnamon batter, fried until crisp outside and soft inside, then finished with powdered sugar. They are simple, fragrant, and perfect as a dessert, snack, or sweet breakfast treat.

    Wash and dry the apples. Peel them if you prefer a softer texture, or leave the skin on for a more rustic fritter.

    Remove the apple cores with a corer, then slice the apples into rings about 1 cm / 0.4 in thick.

    Place the apple rings in a bowl and sprinkle with lemon juice to keep them bright and fresh.

    In a mixing bowl, whisk the flour, sugar, baking powder, cinnamon, and salt until evenly combined.

    In a second bowl, beat the egg with the milk until smooth.

    Pour the liquid mixture into the dry ingredients and whisk gently until you have a smooth, thick batter. Do not overmix.

    Rest the batter for 10 minutes so it hydrates and becomes slightly lighter.

    Heat the oil in a deep pan to 170–175°C / 340–350°F. Use medium heat and keep the temperature steady.

    Pat the apple rings dry, dip one ring at a time into the batter, and let the excess drip back into the bowl.
