Refined first course / contemporary Southern Italian pasta

Gnocchetti Sardi with Sicilian Cauliflower, Raisins and Pine Nuts

A refined Southern Italian pasta course in which Sardinian gnocchetti meet the sweet-savory grammar of Sicilian cauliflower: golden raisins, toasted pine nuts, anchovy, saffron and crisp breadcrumbs. The result is elegant, aromatic and deeply Mediterranean, with a restaurant-style finish and precise control of texture.

Method

  1. 1

Mise en place and station setup

  2. 2

Trim the cauliflower into small, even florets; reserve a handful of the smallest florets for a more elegant final texture. Finely brunoise the onion. Rinse the anchovies briefly if overly salty, then pat dry and chop. Soak the raisins in warm water for 10 minutes, then drain well. Toast the pine nuts separately in a dry pan over low heat until blond and fragrant; remove immediately. Bloom the saffron in 15 g / 1 tbsp hot water. Chop parsley and fennel at the last moment to preserve aroma. Set a large pot of water on to boil, and place a sauté pan wide enough to finish the pasta beside it.

    Prepare the breadcrumb element

  5. 5

In a small sauté pan, warm 15 g / 1 tbsp olive oil over medium-low heat. Add the breadcrumbs and stir constantly until uniformly golden. Season with a pinch of salt and a trace of black pepper, then transfer to a tray or plate to stop cooking.

    Build the aromatic base

  8. 8

In the main sauté pan, add the remaining olive oil and the onion. Sweat gently over low heat for 6 to 8 minutes until translucent, sweet and fully softened, without coloration. Add the chopped anchovy and allow it to melt into the oil. Introduce the chili flakes, then deglaze with the white wine and reduce almost completely.

Cook the cauliflower in the Sicilian style

  11. 11

Add the cauliflower to the pan and season lightly with salt and pepper. Stir to coat well in the aromatic base. Add the drained raisins, half of the pine nuts, and the saffron infusion. Pour in a small ladle of hot water, cover, and cook gently for 8 to 10 minutes, stirring occasionally. The cauliflower should become tender enough to collapse partially while still retaining some distinct pieces. Lightly crush part of it with a spoon to create a natural cream.

    Cook the gnocchetti sardi

  14. 14

Salt the boiling water generously. Drop in the gnocchetti sardi and cook until just shy of al dente, according to the package timing, usually 1 to 2 minutes before the final point. Reserve at least 250 g / 1 cup pasta water before draining.

  16. 16

    Marry pasta and sauce

  17. 17

Transfer the pasta directly into the sauté pan with the cauliflower base. Add a first splash of pasta water and toss over medium heat for 1 to 2 minutes. Add lemon zest, parsley and fennel, adjusting with more pasta water until the sauce becomes glossy and lightly coating rather than dense. Taste and correct seasoning.

    Final refinement

  20. 20

Fold in the remaining toasted pine nuts just before plating so they keep their texture. If desired, finish with a few drops of raw olive oil for aromatic lift. Rest the pasta for 20 to 30 seconds off the heat before plating.

Plate in a haute cuisine style

  23. 23

Use warm shallow bowls. Twirl and mound the gnocchetti neatly at the center. Spoon a few visible cauliflower florets on top for relief. Finish with the toasted breadcrumbs, almond slivers, fennel tips, and, if using, a crisp cauliflower leaf. Add a restrained ring of parsley oil or a few precise drops around the pasta.
