Method

  1. 1

(Detailed, with mise en place + critical points)

  2. 2

Mise en place (set yourself up to move fast)

  3. 3

Cut cauliflower into small florets (bite-size). Keep the stems if tender: slice thinly so they cook evenly.

  4. 4

    Slice onion thinly; mince garlic.

  5. 5

Soak raisins: cover with warm water for 10 minutes, then drain well.

  6. 6

Measure saffron: steep it in 30 g / 1 oz warm water (from the kettle) for at least 5 minutes.

  7. 7

Have tools ready: large pot for pasta, large skillet/pan, small pan for breadcrumbs (or use same pan carefully).

  8. 8
  9. 9

Toast the pine nuts (build aroma + crunch)

  10. 10

Put pine nuts in a dry skillet over medium-low heat.

  11. 11

Shake/stir constantly for 2–4 minutes until golden and fragrant.

  12. 12

    Remove immediately to a plate.

  13. 13
  14. 14

    Make “muddica” (toasted breadcrumb topping)

  15. 15

In the same skillet, add 15 g / 0.5 oz olive oil, then breadcrumbs.

  16. 16

Toast on medium heat for 3–5 minutes, stirring continuously.

  17. 17

Season with a pinch of salt and black pepper. Optional: stir in chopped parsley at the very end.

  18. 18

Transfer to a bowl to stop cooking.

  19. 19
  20. 20

Boil cauliflower (and save that water!)

  21. 21

Bring a large pot of water to a boil. Salt it well (it should taste pleasantly salty).

  22. 22

Add cauliflower florets and cook 6–8 minutes until very tender (almost mashable).

  23. 23

Lift cauliflower out with a slotted spoon into a bowl.

  24. 24

Do not discard the water—this is your pasta water and your sauce “glue”.

  25. 25
  26. 26

Start the sauce base: onion + garlic (+ anchovy if using)

  27. 27

In a large wide pan, warm 60 g / 2.1 oz olive oil over medium heat.

  28. 28

Add sliced onion with a pinch of salt. Cook 8–10 minutes, stirring, until soft and sweet (not browned).

  29. 29

Add garlic and chili flakes; cook 30–45 seconds just until fragrant.

  30. 30

If using anchovies, add them now and stir until they melt into the oil (about 1 minute).

  31. 31
  32. 32

Build the cauliflower sauce (creamy + golden)

  33. 33

Add cooked cauliflower to the pan.

  34. 34

Add the saffron water (including threads) and stir.

  35. 35

    Add drained raisins.

  36. 36

Mash about 1/3 of the cauliflower directly in the pan with a spoon or potato masher, leaving the rest in small pieces for texture.

  37. 37

Add 100–150 g / 3.5–5 oz pasta water to loosen and create a glossy sauce.

  38. 38

Simmer gently 3–5 minutes, stirring until creamy and cohesive.

  39. 39
  40. 40

Cook the spaghettoni (time it to finish in the sauce)

  41. 41

Bring the same pot back to a strong boil.

  42. 42

Cook spaghettoni 2 minutes less than package directions (very al dente).

  43. 43

Reserve 250 g / 9 oz pasta water before draining.

  44. 44
  45. 45

Finish pasta in the pan (emulsion + perfect texture)

  46. 46

Add drained spaghettoni to the cauliflower pan.

  47. 47

Toss vigorously over medium heat for 1–2 minutes.

  48. 48

Add pasta water little by little until the sauce coats every strand and turns glossy.

  49. 49

Stir in lemon zest and lemon juice.

  50. 50

Add toasted pine nuts (reserve a few for garnish).

  51. 51
  52. 52

    Taste, balance, serve (Sicilian finish)

  53. 53

Taste and adjust: salt, pepper, chili.

  54. 54

Plate pasta, sprinkle generously with toasted breadcrumbs (“muddica”).

  55. 55

Optional: extra lemon zest, parsley, and a final drizzle of olive oil.
