Build a glossy ragù (depth first, then sweetness) Warm olive oil in the pot over medium heat. Add onion, carrot, celery + a pinch of salt. Cook 8–10 min until translucent and sweet, not browned. Add ground veal + pork. Spread it out; don’t stir for 60–90 seconds so it browns. Break it up and cook until the raw color disappears and you see light caramelization. Add tomato paste; cook 1 minute (it should smell toasted, not raw). Deglaze with wine and reduce until almost dry. Add passata + bay leaf. Simmer 45–60 min, partially covered, stirring occasionally. Critical point: The ragù must be thick and spoon-coating—watery sauce makes a soggy bake.
