– 2 cups of Idli rice
– 1 cup of urad dal
– Salt to taste
– Water


1. Soak the rice and urad dal separately in water for at least 4-5 hours.

2. After 4-5 hours, drain the water from the rice and grind it in a mixer to a fine paste.

3. Drain the water from the urad dal and grind it in a mixer until the mixture becomes light and fluffy. You can add a little water as needed to achieve the desired consistency.

4. Now mix both the rice batter and the urad dal batter in a large vessel. Add salt to taste and mix well.

5. Cover the vessel with a lid and let it ferment for at least 8 hours or overnight in a warm place. The batter should have risen and doubled in volume.

6. Once the batter is fermented, mix it again to get a smooth and uniform consistency.

7. Grease the idli molds with oil or ghee and pour the batter in them, filling each mold about 3/4th full.

8. Place the idli molds in a steamer and steam for 10-12 minutes or until a toothpick inserted into the center of the idli comes out clean.

9. Once done, remove the idli mold from the steamer and let it cool for a few minutes.

10. Then use a spoon to gently remove the idlis from the mold.

Serve hot with any chutney or sambar of your choice.
