Mise en place (set yourself up to move fast)
Set a bowl of cold water with half the lemon juice (this is your anti-oxidation bath). Place a clean towel next to it (you’ll dry the artichokes before they hit the pan—critical for browning). Prepare: a sharp chef’s knife, small paring knife, spoon, and a wide sauté pan with a lid. Chop parsley; tear mint; measure wine and stock. Critical point: artichokes darken quickly once cut—work neatly, keep pieces submerged, and don’t start the pan until trimming is underway.
Trim artichokes “restaurant clean” (yield = tenderness)
Snap off tough outer leaves until you reach pale, tender leaves. Cut off the top third. With a paring knife, “turn” the artichoke: shave the dark green peel to reveal a smooth, pale surface. Peel and trim the stem (it’s delicious). Halve, then remove any fuzzy choke with a spoon (older artichokes have more). Cut into even wedges (6–8 per artichoke) and drop immediately into the lemon water. Critical point: even size = even cooking; ragged cuts = broken petals and uneven texture.
Dry + start the sauté (browning before braising)
Drain the wedges and dry thoroughly on the towel—press gently. Heat the sauté pan over medium-high. Add 25 g / 0.9 oz olive oil. Add crushed garlic; warm 20–30 seconds until fragrant (no color). Add artichokes in a single layer. Season with a pinch of salt. Sauté 4–6 minutes, turning occasionally, until edges show light golden spots. Critical point: don’t overcrowd—steam kills caramelization. If needed, do this in two quick batches.
Deglaze + braise (tenderness with control)
Lower heat to medium. Pour in the wine; scrape the pan to lift the fond (this is flavor). Let the wine reduce by about half (1–2 minutes). Add stock, cover with lid, and braise 8–12 minutes, stirring once halfway, until a knife meets slight resistance but not crunch. Critical point: keep it at a gentle simmer—boiling toughens and breaks the wedges.
Uncover, glaze, and build the final emulsion (the “haute” moment)
Remove lid and raise heat to medium-high. Reduce the remaining liquid until it becomes syrupy and clings to the artichokes. Turn off heat. Add 10 g / 0.4 oz butter (optional) and the remaining 10 g / 0.4 oz olive oil; toss to emulsify into a glossy coating. Add remaining lemon juice to brighten, then parsley, mint, black pepper, and a touch of zest. Adjust salt. Critical point: emulsify off-heat—too hot and the glaze can split or taste greasy.
Plate with intent (contrast + height + clean edges)
Arrange wedges in a shallow arc or tight mound on warm plates. Spoon the glaze around—not drowning. Finish with toasted breadcrumbs for crunch and pecorino shavings for salinity (optional but elegant). Add a final whisper of mint and zest. Serve immediately while the coating is glossy.
