A bright, velvety pistachio pesto emulsified with pasta water (not cream) for a satin finish. Think “Bronte pistachio + citrus + olive oil,” plated like a modern Sicilian tasting course.

Mise en place (set yourself up like a pro kitchen)
Set a large pot on the stove (for pasta), a small pan (for pistachios), and a blender/processor. Place a fine microplane, a citrus juicer, and a bowl of ice water (optional but helpful).
Weigh everything first: pistachios, cheese, oil, lemon juice. Pick basil leaves and pat them dry—wet basil can dull the pesto and make it watery. Microplane the lemon zest onto parchment (it clumps less). Grate the Parmigiano finely so it melts without graininess.
Toast the pistachios (flavor without browning)
Warm a dry pan over medium-low heat. Add pistachios and toast 2–4 minutes, stirring constantly, until they smell nutty and become slightly more vibrant. You’re not chasing deep color—just aroma.
Immediately slide them onto a cool plate (or briefly into the freezer 2 minutes) to stop carryover cooking.
Build the pistachio pesto base (create the “concentrate”)
In the blender: add toasted pistachios + Parmigiano + salt + pepper (+ garlic if using). Pulse until sandy. Add basil, lemon zest, and lemon juice. Pulse again.
Now drizzle in the olive oil slowly while pulsing until it becomes a thick, spoonable paste—think “soft butter,” not a runny dressing. Scrape down once or twice.
Taste: it should be slightly more intense than you want on the plate (pasta water will mellow it).
Pasta water setup (the hidden sauce-maker)
Fill a large pot with water and bring to a rolling boil. Salt it assertively: about 12 g / 0.4 oz salt per 1 liter of water is a good benchmark.
Keep a mug or small saucepan ready for pasta water. This water is your “cream”—it carries starch that emulsifies oil into a glossy sauce.
Cook the farfalle (timing for sauce emulsification)
Drop farfalle into boiling water and stir for the first 30 seconds so they don’t stick. Cook until just shy of al dente (usually 1 minute less than package time).
About 3 minutes before draining, scoop out 200–250 g / 7–9 oz pasta water and reserve.
Emulsify the pesto (no heat shock, no splitting)
Put the pesto in a large mixing bowl (or a warm—but not hot—pan off heat). Add 60 g / 2.1 oz hot pasta water and whisk until glossy. It should turn into a smooth, pale-green cream. Add more water in small increments if it’s too thick.
Combine pasta + sauce (the “chef’s toss”)
Drain the farfalle (no rinsing). Add immediately to the emulsified pesto. Toss vigorously for 20–30 seconds so the starch and oil bind into a clingy coat.
Adjust texture with a splash of pasta water until it “ribbons” and lightly pools, not puddles. Taste and correct: a pinch of salt, extra lemon juice for lift, or a few drops of EVOO for roundness.
Use warm plates. Twirl or mound the farfalle neatly in the center (a ring mold helps, but not required). Finish with: chopped pistachios for crunch, microplaned lemon zest for aroma, basil tips for freshness, and 3–5 drops of EVOO for shine.
