A refined, fire-led rabbit dish in the haute cuisine spirit: rabbit is lightly marinated with white wine, rosemary, garlic, juniper, and lemon zest, then grilled in precise stages, basted with a reduced aromatic glaze, and finished with parsley oil and charred lemon for a clean, noble finish.

Mise en place and butchery
Prepare the station before touching the meat: one tray for raw rabbit, one small saucepan for the marinade reduction, one bowl for the parsley finish, paper towels, tongs, a pastry brush, and a probe thermometer. Joint the rabbit cleanly into forelegs, hind legs, and saddle portions. Trim only obvious ragged fat or silverskin; do not over-trim, because the little surface fat present helps protect the meat on the grill.
Pat every piece very dry. This is not cosmetic: dry meat colors; damp meat steams. In a non-reactive dish, combine the white wine, 60 g / 2.1 oz olive oil, garlic, rosemary, thyme, bay, juniper, lemon zest, and black pepper. Coat the rabbit thoroughly, cover, and refrigerate for 4 hours, turning once halfway.
Fire management, seasoning, and finishing elements
Remove the rabbit from refrigeration 30 to 40 minutes before cooking so the temperature begins to equalize. Lift the pieces from the marinade and strain the liquid into a small saucepan. Discard the spent herbs and garlic. Bring the liquid to a boil and reduce it for 3 to 4 minutes until lightly syrupy; this becomes your safe basting glaze.
Make the finishing oil by mixing the remaining 20 g / 0.7 oz olive oil with parsley, lemon juice, and a small pinch of salt.
Prepare a two-zone grill: one hot side for marking and one gentler side for controlled cooking. Clean and oil the grate carefully. Just before the rabbit goes on, pat the pieces dry again and season evenly with the sea salt.
Initial marking: exact order of operations
Start with the hind legs on the hotter zone, because they are the thickest pieces and benefit from the earliest contact with the grill. Sear them about 2 minutes on the first side and 1½ to 2 minutes on the second side. Move them immediately to the gentler zone.
Next, mark the forelegs in the same way, though they may need slightly less time. Finally, place the saddle pieces on the hot zone for only 60 to 90 seconds per side—just enough to establish elegant grill definition without hardening the lean loin.
As each piece is marked, transfer it to the gentler side in the same order: hind legs first, forelegs second, saddle last.
Gentle grill-roasting and basting
Close the grill lid if available, or create a semi-covered environment. Continue cooking over the gentler zone, turning the pieces every 3 to 4 minutes. After each turn, brush very lightly with the reduced wine glaze. The glaze should perfume and lacquer, not soak.
In the final 5 to 6 minutes, place the lemon halves cut-side down over the hotter zone until caramelized at the edges.
Cook until the thickest part of the hind legs reaches 68–70°C / 154–158°F, while the saddle reaches 63–65°C / 145–149°F. Because the pieces differ in size, remove them individually as they reach temperature.
Resting and final seasoning
Rest the rabbit on a warm tray or rack for 8 minutes, loosely tented. This stabilizes the juices and softens the muscle fibers after grilling. During the rest, brush the pieces once more with a very small amount of parsley oil. This should read as brightness, not sauce.
Squeeze a little charred lemon over the legs only; keep the saddle more restrained so its sweetness remains intact. Taste one small edge and correct with a final grain or two of salt if necessary.
Plating
Use warm plates. Arrange one hind leg, one foreleg, and one saddle portion per plate, keeping height and negative space in mind. Spoon a narrow brushstroke of parsley oil beneath or beside the rabbit rather than over it. Add one charred lemon half, a few tiny rosemary tips, and a final drop of raw extra-virgin olive oil for aroma.
Serve immediately.
