Mise en place + oven setup (the calm before the caramel)
Set the oven to 150°C / 300°F. Place 6 ramekins (150–180 ml) on a clean tray. Prepare a deep roasting pan that can hold them with space around each. Put a kettle on to boil—your water bath must be ready quickly once the custards are filled. Set out: a small saucepan, whisk, heatproof bowl, fine sieve, ladle, and a clean towel. Critical point: custards hate drama—keep everything organized so the caramel doesn’t over-darken while you search for tools.
Caramel (amber, not bitter)
In a small saucepan, combine sugar + water + lemon juice. Stir only at the start to wet the sugar, then stop stirring. Bring to a steady boil over medium-high heat. Watch the color shift from clear → straw → deep amber. When it reaches a copper-amber tone (smells like toasted sugar, not smoke), immediately remove from heat. Quickly pour a thin layer into each ramekin and swirl to coat the base (and a little up the sides if you like). Critical point: if it goes too dark, it will taste bitter—err on the lighter amber side; it will continue to deepen slightly from residual heat.
Infuse the dairy (flavor, then temperature control)
In a saucepan, warm milk + cream + vanilla with salt until steaming and just below a simmer (tiny bubbles at the edge). Add 90 g / 3.2 oz sugar and whisk to dissolve. Remove from heat and let stand 5 minutes. This brief rest rounds the vanilla and slightly cools the base—important for the next step.
Egg work + tempering (silk, not scrambled)
In a bowl, whisk eggs + yolks just until fluid and combined—avoid whipping in air. Slowly drizzle the warm dairy into the eggs while whisking continuously (start with a small amount to “teach” the eggs the temperature, then increase the flow). Strain through a fine sieve into a clean jug/bowl to remove any egg threads and ensure a perfectly smooth set. Let sit 2 minutes, then skim surface foam if present. Critical point: foam becomes bubbles; bubbles become craters.
Fill + bake au bain-marie (gentle heat = haute texture)
Pour custard into caramel-lined ramekins, leaving a small rim. Place ramekins in the roasting pan. Add just-boiled water to the pan until it reaches about halfway up the ramekins. Carefully move to the oven. Bake 30–45 minutes (time depends on ramekin size). The custard is done when the edges are set and the center has a soft, controlled wobble (like satin). If you have a thermometer, aim for 82–84°C / 180–183°F in the center. Critical point: overbaking causes graininess and weeping.
Chill, unmold, and plate (the reveal)
Remove ramekins from the water bath and cool 30 minutes at room temperature, then refrigerate at least 6 hours (overnight is ideal). To unmold, dip the ramekin base briefly in warm water 10–15 seconds, run a thin knife around the edge, invert onto a chilled plate, and lift—let the caramel cascade naturally. Plate with intention: keep the budino centered, caramel as a glossy sauce, no smears unless deliberate.
