Oven-Roasted Veal with Rosemary Pan Juices

    Remove the veal from the refrigerator 45 minutes before cooking so it warms slightly. Pat it dry very well with paper towels.

    Tie the roast with kitchen string so it keeps an even shape during roasting. Season all sides with salt and black pepper.

    Heat the oven to 170°C / 340°F. Place carrots, onion, and celery in a roasting pan as a vegetable bed.

    Heat olive oil in a heavy skillet over medium-high heat. Sear the veal on all sides until lightly golden, about 8–10 minutes total.

    Add butter, garlic, rosemary, and sage to the skillet. Spoon the aromatic butter over the meat for 1 minute.

    Move the veal onto the vegetable bed in the roasting pan. Pour the skillet juices over the top.
