Prep the asparagus. Rinse well. Snap off woody ends (the tough part naturally breaks). If stalks are thick, peel the lower third with a vegetable peeler. Cut tips into 3–4 cm pieces and slice the stems into thin rounds.

Make quick asparagus broth (optional but very Veneto). Put the woody ends in a small pot with about 600 g / 21 oz water and a pinch of salt. Simmer 10 minutes, then strain. (If skipping, just use pasta water later.)

Start the sauce base. In a large pan, warm butter + olive oil over medium-low heat. Add shallot (and pancetta if using). Cook 6–8 minutes until soft and sweet, not browned. Add garlic (if using) for 30 seconds.

Cook the asparagus stems. Add sliced stems, a pinch of salt, and cook 3–4 minutes. Pour in the white wine and let it bubble 1–2 minutes to reduce.

Soften and “cream” the sauce. Add a ladle of asparagus broth or water and simmer until stems are tender (about 6–8 minutes). For a creamy Veneto texture, mash some stems with a fork, or blend half the sauce quickly and return it to the pan.

Cook the linguine. Boil salted water. Cook linguine until al dente (usually 1–2 minutes less than package time). Reserve at least 250 g / 9 oz pasta water before draining.

Finish with the tips. Add asparagus tips to the pan and cook 2–3 minutes (they should stay bright green and slightly crisp).

Emulsify (the magic step). Add drained linguine to the pan. Sprinkle in cheese, toss vigorously, and add pasta water a little at a time until glossy and silky (not dry, not soupy).

Brighten and serve. Add lemon juice, optional zest, parsley, and plenty of black pepper. Taste for salt. Serve immediately with extra cheese.
