Farfalle al Salmone — “Milanese Silk & Sea”

    Set out one large pot, one wide sauté pan, a fine grater (zest), a microplane (optional), and warm serving bowls (low oven or hot water). Weigh every ingredient. Brunoise the shallot (tiny, even cubes) so it melts into the sauce without crunch. Pat salmon very dry; remove any pin bones. Cut into 1.5–2 cm cubes so they cook through gently without shredding. Keep salmon chilled on a plate—cold fish buys you control later. Chop herbs last (to keep them bright). Prepare a small cup and plan to reserve pasta water: it’s your emulsifier, not an afterthought.

    Fill the pot with plenty of water and salt it decisively (it should taste pleasantly like the sea). Bring to a strong boil. While water heats, place the sauté pan over medium-low heat. Add butter + olive oil; when the butter foams, add shallot and a pinch of salt. Sweat 3–4 minutes until translucent—no color. Add wine, increase heat to medium, and reduce until almost dry (you want the sharp alcohol edge gone). Add cream and let it simmer gently, reducing to a light nappe (it should coat the back of a spoon). Keep heat low: the sauce must whisper, not boil.

    Cook the farfalle (time it to your reduction)

    Add farfalle to boiling water and stir well in the first minute to prevent sticking. Cook until 2 minutes shy of the package’s “al dente” time. While it cooks, keep your sauce at a soft simmer—if it thickens too fast, lower heat and wait; if it’s thin, give it another minute. Reserve 150–200 g / 5.3–7.1 oz of pasta water before draining. Drain farfalle, but do not rinse. The surface starch is part of the sauce.

    Marry pasta + sauce (emulsion, not “pouring sauce”)

    Add drained farfalle directly into the sauté pan with the reduced cream base. Toss and fold over medium heat for 30–60 seconds. Add pasta water a splash at a time (start with 30–50 g / 1.1–1.8 oz). You’re looking for a glossy coating that clings to each bow-tie crease. Season with white pepper. Add capers if using. The goal is a controlled sheen—if it looks tight, loosen with more pasta water; if it looks watery, toss over heat a little longer.

    Cook the salmon in residual gentleness (luxury = restraint)

    Turn heat to low. Add salmon cubes and fold carefully so they remain intact. Cook 2–4 minutes depending on cube size: the sauce should never boil. The salmon should turn opaque on the outside while staying tender and moist inside. Remove from heat, then add lemon juice, lemon zest, and herbs. Taste and correct: salt should be precise; acidity should “lift” the cream, not dominate it. If the sauce splits or looks too thick, a final spoon of pasta water brings it back to silk.

    Warm bowls matter: they keep the sauce satin. Spoon and “stack” the farfalle to show volume, then place a few salmon cubes on top so they read as the hero.
