Anelletti with Shrimp & Lemon (Anelletti con gamberi e limone)

A bright, contemporary Sicilian-inspired pasta: tender shrimp, lemon zest perfume, and a glossy, emulsified sauce—finished with crunchy lemony pangrattato for contrast. Serves 4.

    Pat shrimp very dry with paper towels (dry shrimp = better sear). Zest the lemon first, then juice it. Slice garlic thin (so it perfumes without burning). Chop parsley. Keep 1 small cup of pasta water space ready near the stove (you’ll need it fast).

    Build the crunchy lemon pangrattato (2–3 min).

    In a large skillet (the one you’ll finish the pasta in), warm 10 g / 0.35 oz olive oil over medium heat. Add breadcrumbs and a pinch of salt. Stir constantly until golden. Off heat, mix in ½ of the lemon zest. Tip into a bowl immediately (leaving it in the pan keeps cooking and can turn bitter).

    Start the pasta water (critical timing).

    Bring a large pot of water to a rolling boil. Salt it generously (it should taste pleasantly salty). Drop in anelletti and cook until 1–2 minutes shy of package “al dente” (you’ll finish in the sauce).

    Transfer pasta to the skillet 1–2 minutes before done. Toss vigorously, adding pasta water little by little until every ring is coated and the sauce clings. Add shrimp back in for the final 30–60 seconds (just to heat through). Off heat, fold in parsley and remaining lemon zest. Taste: adjust salt, pepper, and the last splash of lemon juice if you want it brighter.
