Anelletti with Mussels & Chickpeas (Sicilian Coastal Haute Cuisine)

A ring-shaped pasta finished like a refined risotto in a glossy mussel jus, balanced by a silky chickpea cream and a bright lemon-herb lift. Serves 4.

Easy

Method

  1. 1

Mise en place: set your station (5–8 min)

  2. 2

Bring a large pot of water to a boil (you’ll salt it later). Set out: a large lidded pot for mussels, a fine strainer, a blender, and a wide sauté pan for finishing the pasta.

  3. 3

Prep: mince shallot; crush garlic; zest lemon; pick parsley leaves; measure wine, oil, butter.

  4. 4

Critical point: anelletti cook fast and can over-soften—your goal is to finish in the pan with mussel jus, not fully in the water.

  5. 5

Mussels: clean, check, and stage (8–12 min)

  6. 6

Rinse mussels under cold running water while rubbing shells; pull off beards. Discard any with cracked shells. Tap any slightly open mussels—if they don’t close, discard.

  7. 7

Hold cleaned mussels in a bowl (cold) while you heat the pot.

  8. 8

Critical point: do not soak mussels for long; they can die and taste dull. Freshness is everything.

  9. 9

Build mussel jus: steam, strain, reduce (10–14 min)

  10. 10

Heat 15 g / 0.5 oz olive oil in the lidded pot. Add shallot + garlic; sweat 60–90 seconds (no browning). Add wine, bring to a brisk simmer, then add mussels and cover. Steam 3–5 minutes, shaking once, until opened.

  11. 11

Lift mussels out. Strain the cooking liquid through a fine strainer (or cloth if sandy). Return liquid to the pot and simmer 2–4 minutes to concentrate.

  12. 12

Critical point: discard any mussels that remain closed after cooking.

  13. 13

Chickpea cream + crispy garnish (10–12 min, parallel task)

  14. 14

Warm 15 g / 0.5 oz olive oil in a small pan. Add half the chickpeas; sauté until lightly crisped, season with salt (these are your “texture pearls”).

  15. 15

Blend remaining chickpeas with 180 g / 6.3 oz warm water/stock, 10 g / 0.35 oz butter, lemon juice, a pinch of salt, and black pepper until silky. Keep warm (very low heat).

  16. 16

Critical point: if it’s too thick, loosen with warm water—this should be a spoonable cream, not hummus.

  17. 17

Cook anelletti “short,” then finish like risotto (8–10 min)

  18. 18

Salt boiling water generously. Cook anelletti 2 minutes less than package time. Meanwhile, in a wide sauté pan, warm the remaining 15 g / 0.5 oz olive oil and add a ladle of mussel jus.

  19. 19

Transfer pasta directly into the pan (reserve pasta water). Add more mussel jus little by little, tossing constantly, until the pasta turns glossy and the liquid clings. If needed, add small splashes of pasta water to keep it fluid.

  20. 20

Enrich + fold mussels (2–3 min)

  21. 21

Turn heat to low. Add remaining butter (10 g / 0.35 oz) and toss to emulsify. Add chili flakes (optional), lemon zest, and most of the parsley.

  22. 22

Add mussels (removed from shells if you want a finer plating, or keep a few in shell for drama). Toss just to warm—do not boil. Taste and adjust salt carefully (mussel jus is naturally salty).

  23. 23

Critical point: overheating makes mussels rubbery; they only need a gentle re-warm.

  24. 24

    Plate with intention (2–4 min)

  25. 25

Swipe a spoonful of chickpea cream on each warm plate. Nest the anelletti on top with tongs for height. Arrange mussels visibly. Finish with crispy chickpeas, remaining parsley, a thread of olive oil, and a final whisper of black pepper. Optional: a tiny squeeze of lemon at the table.
